Hello my beautiful princes and princesses and welcome to another post.!! :) In this post we will be cooking.!! :) Just like the title says, this is a carrot soup with sweet potato and ginger, it turns out orange in colour, soft, creamy and sweet, and believe me, it's delicious and perfect for Autumn and Winter.!! :)
Ingredients:
1 large onion diced
3 tablespoons of olive oil
2 garlic cloves
5 teaspoons fresh ginger
5 cups of water or vegetable broth
1 large sweet potato peeled and finely chopped
1,5 pounds carrots (half a kg) peeled and finely chopped
1 teaspoon of salt
Directions:
- Use a blender to blend the onion, garlic cloves and ginger. In one large pot add the olive oil and heat over high heat for a few seconds. Then bring to medium heat and add the blended ingredients. Cook for 5 - 10 minutes.
- Add the water or broth in the pot, bring to high heat and add the sweet potato and the carrots, stir and then bring to medium heat. Boil for 20 minutes, add the salt, stir and let the soup cool for 15 minutes.
- Using a ladle, add some soup into the blender and mix until it turns into puree for a few seconds. Then pour the mixture back in the pot of soup and repeat the process until the entire soup is smooth. Serve warm or cold.
